Daren in the kitchen, Louise out front helped by Polly her sister. Lou's mom makes the traditional puds and Sally, Lou's other sister, does the books!! Having spent many years in London and counties around the country, Daren joined the Elms in December 2003 as Head Chef. Louise and her family ran the Colliers Arms for 5 years until February 2007 when she also joined the team at the Elms. When the opportunity of the Hop Pole came about, the timing was perfect for Daren, Louise and their children to make the next step of doing it for themselves.
